Can anyone advise if it is possible to run a cordless phone off a cisco IP7940 handset so that we can take calls when in other parts of the building?

There are 3rd-party options from vendors such as Plantronics that allow for you to use a wireless earpiece and/or bluetooth headset but, to my knowledge, there is no way to connect a cordless phone off a 7940.  The wireless/bluetooth earpiece/headset options are the only real options you have here; however, the range is going to be limited.  Next option would be to implement a wireless infrastructure and deploy a few wireless phones, as needed.  If it's critical but limited in nature, you could also use an analog device (VG202, VG204, VG224) which you could connect a standard cordless set to but have the primary call control be VoIP via the analog gateway.

Yeah the best solution is that you either:

a) Use an FXS port to connect a traditional cordless phone to, or

b) Purchase a wireless IP phone, like a 7920, 7921, 7925 in leiu of your current 7940 solution.

The IP phone <-> handset cable is essentially a speaker cable from the phone to drive the microphone and speaker connection.  It would be like trying to plug your cordless phone between an analog handset base and the earpiece--it wouldn't work since that's not a tip/ring telephony circuit.

A bluetooth headset could work, but you would need one that has a handset lifter, sine the headset jack does not provide call control to the phone itself and you wouldn't be able to remotely answer.
