Is it possible to connect to a 7920 phone (in the cradle with USB enabled) and program it through Cisco Configuration Assistant?
If not, what other tool can program it to connect to the UC_520 wireless?

The 7920 is very old. It was EOL(End of Lifed) -ed in 2007.The 7921 itself was EOLed recently.
If you would like to cradle the 7925 and configure via USB, use the following process.

This process shows you how to access the 7925 via USB and how to provision them to register with the PBX.
There should be similar procedures for 7921 and 7920.
