Can you use any of the SPA500 series phones with an SRST gateway like the 1861 in SCCP mode?
Or would you be forced to use SIP mode for this? Or would they even work with it?

No, you can not. The phones run a tokenized version of SCCP called SPCP, which only the UC500 recognizes.
The SPA phones also run pure SIP and can be used anywhere in that mode.

We don't sell, position or support SPA phones for UC solutions beyond UC500, but in SIP mode they may be expected to act like any third party SIP phone. I have never done it, but those phones are sold into hosted SP environments every day (various call controllers).
