Hello,
I would like to know if AIM-VPN/EPII-PLUS (at the moment installed in 2821 ISR) is compatible with 1841 modular router?

No, unfortunately AIM-VPN/EPII-PLUS is only supported on 2800 series and 3825 router.
For 1841, you would need AIM-VPN/BPII-PLUS.

AIM-Based VPN Acceleration | • Support for an optional dedicated VPN AIM can deliver two to three times the performance of embedded encryption capabilities. |
AIM supports 2 or 3 times without the card, so I assume if AIM can support 800 tunnels, without AIM will probably support around 250-300 tunnels.

If it's not supported, probably you will know the possible maximum quantity of VPN tunnels w/o AIM module?

Apology, I couldn't seem to find any information on the number of tunnels without the AIM module.
With AIM module, it's 800 tunnels:
