is there a way to to pull out of the Expressways how many SIP calls are made per day?

Take a look at the Capture Call Detail Records section of the Expressway guide:

The source alias and destination alias should show if the call is to or from Webex. Partners with monitoring GUIs like Vyopta may already have a dashboard to display this.
