As soon as the Webex Meeting Client update is initiated. How long do the users have time to delay the update until it gets pushed?

I think you're referring to the Webex Meetings Desktop app update to the Webex app, right?
AFAIK, the Meetings Desktop app has not yet been depricated, so it will be possible to use it also after the migration of your meeting site. But for sure, it is recommended to change the app as well in order to get the full meeting experience.
