Is there a task scheduler or a manual way to force the latest update on a "webex" client on a windows machine? We have a few machines that are still on the old version.

Nope, the app checks for update when it's kind of "idle", automatically loads the current version.
In case you have a very old version, you may manually need to update (I think it is 41.1 or so, cf. https://help.webex.com/mqkve8/)
