Hello, I'm new here, I recently bought a 240AC and am in the process of Configuring it.
I have a cisco3560G switch that is connected to a Cisco 2911 Router.
I want to set up several SSIDs for various vlans which I've already Configured on the 3560 switches.
I'm pretty sure I want to set the port that the AC240 is plugged into with Vlan trunking. It is my understanding, that I also need to set the I gig port on the 240AC with trunking as well.
I also suspect to get the IP address to be assigned via DHCP I'll need to set up virtual interfaces for each of the vlans to ensure that the devices get asigned correctly?

yes, if you want the 240AC to pass on multiple vlan's to the switch port,
then the interface needs to be configured as vlan-trunk on both sides
you use an DHCP server on your local LAN? (not on the AP?)
then yes each vlan needs to have an IP-address like a SVI on the switch or (sub)interface on your router.
and configured an "ip helper" pointing to your DHCP server
