Network design and setup help needed

I'm looking to design and set up a network that can handle up to 1000 simultanious connections, mostly wireless. I've done SOHO networks before with one server but nothing of this size.network, server, wireless, 

Requirements are:

Application Server

DNS Server

DHCP Server

File & Printer sharing for staff

Print Server

Staff Intranet Server

Guest Intranet Server

Database Server

Staff and guests to connect to WiFi AP on mesh network but on separate SSID.

How many servers would be needed? Is one server needed to handle each of the above requirements?

This may be a SOHO but you need to hire a competent integrator to do this right.
Wireless of up to 1000 wireless clients is not classed as a "SOHO".
