You need to perform an over the air packet capture. For this you need a wireless network card on the same channel as the barcode scanner, which is able to operate in monitor mode.

Easiest way to do this is to use Airtool on a MAC as windows its really painful to get OTA captures working

There might be the ability to do captures using the barcode scanner itself dependent on the model
