You can apply policies by device type, but some clients may misidentify themselves when specifying the User-Agent string field of an HTTP GET request. Device type policy enforcement is done on a best-effort basis, dependent upon the information that the client provides. When needing to enforce security-focused policies based on device type, please leverage solutions such as Meraki Systems Manager, or Cisco ISE.

Yes it will on a per SSID basis up to 11 device types , many options block and custom policies. its a basic control but as other have said there are other ways to do this, but if you have a use case it will work with some caveats.
