I have a 4402 and need my guest users to be able to do vpn (ipsec or pptp) back to their companies. Can I do this?

Yes you can - depending on the version of software - the following links will give you detailed configuration examples to configure VPN passthru:-
WLC ver 4.0

WLC ver 4.1

WLC ver 4.2

But what would I enter under VPN gateway address. These are going to be vendors/guests using this so there is not just one VPN gateway address (If I read correctly that needs to be IP of device terminating the VPN connection).

You would enter "0.0.0.0" = any, just like in an static route.
