While setting up the AIR-SAP1602E-A-K9 using a web browser, the AP managed to take the IP address of another device.

You will need some type of software to find out what is on your network or be able to get into your router and access the DHCP list and see what is new.  Once you know the IP you can access the AP.

I would suggest getting console access and checking the IOS version on the AP
