Our current Guest SSID is wide open. We plan to implement both a PSK and a Splash Page for our AUP in the next month, and testing this, I noticed I had to "forget network" on my device and reconnect as if it was the first time again. I guess one way around this would be to introduce a new SSID or rename the current, but are there easier ways to implement these type of changes that won't require users to delete or forget network on their devices? I even tried just turning my WiFi off/on, but had to completely remove in order to reconnect with the new features enabled.

No, you can either forget the network and make a new connection or create a new SSID and instruct users to use this new SSID.
The connection is saved on the device, so it is necessary to forget the network.

Keep in mind that with Meraki APs and SSIDs, in order to user Intel Wifi 6 and get your users faster wifi speeds, you will need to set a password, at minimum, for the guest network. We currently have a guest network with a password that runs on the 6Ghz band. However, to simplify the connection for guests, I created a QR code with the password and posted in our branch offices. This allows guests to simply scan the bar code with their phone and they are connected. It basically pulls up a custom splash screen that they click submit and their are connected after scanning the QR code.
If you are roaming between APs and don't want the connections to drop then make sure you have the following:
Bridge Mode
Same Channel
Continuous Coverage
802.11r turned on
Roaming Aggressiveness adjusted on some client devices.
