My company is providing internet service to an apartment complex. The connection to the internet provider (UUNet) is through a 2620 cisco. The router feeds 1900 switches in each building. What is the recommended settings we should consider in the router for security?

You could run the firewall feature set http://www.cisco.com/warp/public/cc/pd/iosw/prodlit/fwfs_ds.htm on the 2600 or better yet, drop a PIX firewall in between your nework and the 2620 if UUnet manages it.
