I'm installing a few WAPs in very difficult to reach locations. Does anyone have any recommendations on a remote serial console device I can connect to the serial port on the WAP that I can run an extra cat6 cable to at the time of install? I'd rather not have to rent a lift if my AP ever loses a config on the network side.

Why not just run another Ethernet cable back to a patch panel. Then you can connect directly to the patch panel or use a terminal server to connect to the AP? If you already have a terminal server you use for your switches and routers for example, you can utilize that. Just make sure that there is no ethernet length restrictions from the vendor of the TS.

I don't mind doing that, I just wasn't sure what serial device would work over cat6 at nearly 100 meters.

It should, I have done that in locations where ap's are not accessible. You just need to test and verify with the manufacture. Some uses the same rj45 pinouts and others might not.
