how can you configure two SSID with two different IP ranges on cisco 800 series

Yes it is possible, just do not link it to the wireless interface dor that vlan.

I did it three SSID and have created a different subnet and each vlan on the 2.4GHz wireless I'm not sure you can too on 5GHz?

If your router have a different radio interface, then, yes, you can do it.
If it is in the same interface that you want to use 5.0 Ghz f then I dont think so,
WHat 800 unit are you using?

I have the 800 series that has two Cisco 2.4Ghz and 5Ghz frequencies
The 2.4GHZ is now I'm trying to find and that does not work with the 5GHz
