Is it possible to have 1 WDS AP supporting 30 AP and another WDS AP supporting another 30 AP in the same domain? Or can you split them up into 2 seperate domains?

That should work. Because you have the capability to specify the WDS AP's ip address on individual access points, rather than a self discovery of the WDS AP. You can specify the WDS AP ip address on each AP.
wlccp ap wds ip address 10.10.10.2 - first 30 APs
wlccp ap wds ip address 10.10.10.3 - second 30 APs
.2 and .3 are the two WDS APs.

wlccp ad wds IP address command is for WLSM ONLY. If you use an AP for WDS device, the restriction is still the same.
1. One AP per broadcast domain.
2. 30 APs per WDS AP if the radio interface of the WDS AP is up
3. 60 APs per WDS AP if the radio interface of the WDS is down
