Anyone have performed backups for the new packaged CCE ? Any guidance on all the proper backup procedures?

Yes, just backed up the SQL DBs, that's really it, rebuilding a VM is pretty easy, but if you really wanted to be hardcore you could use ESX to backup all your VMs.
