Hi Manoj,
Even i haven't seen any checklist but i check everything we do as if it is fresh install.
1. Check all the services are up and licenses are intact
http:\\CVP IP Address:8000\cvp\diag.
2. All the PIM status and failover of PG's is working.
3. All TCL and VXML files for new version are uploaded to GW.
4. If you have any CVP Application you need to test those application.
5. Validate all custom CVP applications are working.
6. Check all the logs CVP\Logs and Application\Logs are showing normal.
7. Check OAMP for Server status.
8. Also validate call Routing to agent, transfer and Queuing when agent is busy
