Is it possible to suppress or hash-out CLI, CED and DNIS within the CVP 3.1 logs to mitigate fraudulent access to customer sensitive details (Credit card details, home phone number, etc.)?

There is no way to filter out information from the CVP logs in 3.1.

Here's something you could try if you're using CVP Studio 3.1.
You could change the 'Default Logging Level' in the CVP Studio application's Project Properties window to 'None', 'Minimal', or 'Moderate' (you'd have to try each and see which one disables storing of caller entered digits). I think that 'None' will only log the start end end of call events.
Then within the Studio app, if there IS any data that you want logged, you can use the Add to Log box in the General tab of each element's configuration pane.
