I have a 7975 in service and was going to replace a 7942 with a 7975 but noticed it was a CP7975G wheras the other one just says 7975 is there a difference / reason the 7975G will not register.

"7975" only was the first-generation of 7975 that came out. Later, Cisco put the "G" at the end which means GLOBAL language support.
I am suspecting the "7975" is running an OLD firmware while the 7975G requires a newer firmware, which you don't have enabled.

I think you are correct it is currently running 9.3 but i can not find a sw pack for UC520 and 9.3
