I need to setup a fully working voip lab (including cucm, cuc, vg224, cube, etc), and I was wondering if it is possible to use some soft phones as opposed of physical phones. I remember in a virtual class, I could run multiple instances of some piece of software that looks just like a cisco phone with all the buttons etc., and I could place, receive calls, etc and test out the dial plans, etc.

That is IPBlue which allows multiple softphones instances to run on a single PC but if I remember correctly only 20 minutes are free and then you will need to launch it again unless you purchase the licensed version. Alternatively, you can use Cisco IP Communicator but that will only allow to run one instance on a single PC.

Adding to the info shared, you could also use Cisco jabber or any third party sip soft phones like x-lite.
