Is it possible to change the IP address of all the servers in a Cluster? CUCM, Unity and UCCX. What are the core dangers of doing this as I am sure nothing good can come of it. Is there any published documentation of doing something this stupid?

If you mean if there's a doc outlining the change in all 3 systems and what to change in each if they're integrated, no. The documentation is per product, and only outlines how to change the IP on each product.
