Cisco IP Phone 8851 Conference Calls

I had a customer of mines, ask me what is the max number of people(callers) that can be in a conference call. I also would like to know where I can find the literature on that to give to him.

This is not related to any model of phone. It would be dependent upon the conference bridge you have and more specifically the number of ports you have on it.
