Cisco ip phone stuck on “configuring ip” and “unprovisioned” this was started to happen after configuring linksys E2500. Do I need to adjust DHCP settings on the router or port forwarding? Please assist.

Dump question: Why don't you ask the questions related to Linksys devices in the forum of Linksys?
Just because the device you connect to the Linksys is a Cisco device, you ask the question in a Cisco forum?
The forum here only can provide general configuration considerations, but the information of how to actually configure the linksys device should be searched in the linksys docs, website, forums, ...

Hi,
It should be on VLAN Management menu.
Anyway.. did you define any VLAN on Linksys?
If you connect a PC with the same cable of the phone, do you receive an IP Address?
On which Call Control system should the phone register to? (CUCM , CME)
