Is it possible/supported to update the firmware of CP-8851-3PCC from MPP to Enterprise (3PCC to CUCM)?

Conversion from MPP to Enterprise or Enterprise to MPP is not supported.

That's right. There was an option in one of the older versions.

Is there a way for a CP-8851-3PCC phone to be registered in CUCM?

There is no official way to register CP-8851-3PCC on CUCM. You will have to replace them with appropriate models supported on CUCM. Anything with 3PCC is not supported to work on CUCM.

Can you try downgrading the firmware of the phone and then convert the phone to Enterprise?

There is no supported firmware on which we can convert the phone from MPP->Enterprise or vice versa.
