Clarification of dail peers working on H.323 or SIP Trunk

How dialpeers work for h.323 or sip GW/trunk for incoming and outgoing calls .

what is the call flow in terms of SIP and H.323 for an Incoming and outgoing calls.

how dailpeers comes in to the Picture .

as i know call manager will not come in to the picture when using sip or h.323 call routing , call routing needs to done using dial peers . as cucm has no control over SIP and H.323 call control .
