Setting up a call handler is pretty straight forward.

Basically though you are just setting up a call handler to answer incoming calls. If you require user input during the greeting you can use the "caller input" configuration. Be aware that you can also set schedules, closed and opening greetings, and also transfer out to any extension you like.

not that i'm aware of, all we use are call handlers to perform that job

above is the guide which will tell you all that can be configured on a call handler, the basic is to configure the caller input depending on what the user presses while hearing the prompt and then transfer it to a phone or maybe to another call handler but something such as a guide on how to configure them, no.
maybe someone at the forum has a personal doc on the subject but nothing like that at CCO
the link contains all the admin guide so you can refer to all the elements you need to configure on unity and it's the same on any unity version
