CP8851 firmware

Current active load setting on phone is 12-0-1sr1-1.  Is there a way to update this to 12-5-SR3 or newer?  Current setting won't work with our IP service and was told we need as least the 5 or newer.  Thanks.

Just install the new firmware in CM. That will update the device to the newly installed version. The process for this is well documented.
