Hi, I have a customer who has HP DL380 G9 servers and wants to run UCM/CUC version 11 on ESXi6. Is there a doc with minimum CPU/memory requirements or supported servers. I have been searching but cannot find.

Since you want to install UCNM/CUC on a HP server and not on Cisco UCS server, hence that will fall under the category of Third-Party Server Specs-based. It is absolutely ok to go ahead with the installation as long as your HP server meet the hardware requirements mentioned in below document as per Third-Party Server Specs-based :
