I recently came across an offering that is supposed to give the install of ESXi on any server and then a virtual machine of CUCM 8.6. It says it will install on any server (or PC) but ESXi has a hardware compatability guide that shows approved hardware. Since this installs on any hardware does that mean it is a hacked version or does ESXi actually install on any hardware?

ESXi itself will install on pretty much anything just like Windows as it is simply the OS. As to CUCM 8.6 it does install in cirtulized environment on pre approved OVA templates, but you can install it on any guest VM as long as you provision enough RAM, CPU and storage as that is all CUCM installer checks for.
