Can someone tell me how I can set up a PIN (lock) on the keypad on Cisco 7975 handset please?

PIN lock to use the phone.. I need to stop my users to dial out my from desk phone.

This has been asked plenty of times before at CSC, please try to search for answers before posting.

There is no out of the box feature to do what you're asking on CUCM or CME.

What you're looking for forcefully requires you buying a 3rd party app to do that.

The built-in options from Cisco would be EM, FAC or CMC.
