Does anyone know how to find out extensions of each phone in a company?

You mentioned no product/technology/phone system you are speaking of.

Because if it I can offer you just generic answer - ask the administrator of the system in question ...

I can't believe I did that. So exhausted trying to find this out.

It's a 7931g Cisco IP phone.

Single phone is not the phone system. The system we need to know is the Call Manager or PBX the phone is connected to.

If you're an end user, you need the following:

A) To know who the call control is, and how to reach it (IP, hostname, FQDN, etc.)

B) The credentials to access the system

If you don't have the above, you would need to locate the individual(s) who know that info to get what you're looking for.
