How far back are CDR records?

I was hoping to pull some call records from five years ago in CUCM 10.5 but it looks like I only have the option of going back one year. Is there something I can change to keep history for longer period?

No, the size of the CDR/CAR is fixed, and the maximum amount of time CDRs are stored is 30 days, for CAR it's 180.

And depending on the amount of calls, you might hit the DB size before you even hit the 180 days.

If you need more than that, you need to configure a billing server and keep those in your own 3rd party billing server, or send the cdr records to your SFTP and then process them yourself.
