I have Cisco 8861 phone, how to configure this for Asterisk:

sip88xx.11-7-1-17 are for Enterprise phones. You should be using MPP (3PCC) phones if you want to register to Asterisk. I would suggest getting it replaced with the right SKU.

Do you mean the phone you have is already "CP-8861-3PCC-K9="
What is the current software version on the phone?

This is an Enterprise firmware. You will have to replace the phone with the 3PCC version - "CP-8861-3PCC-K9="

No. Enterprise to MPP (3PCC) or the other way is not supported as of now.

You can, but it will be the hard way, as you don't have a 3PCC model which has a nice GUI where you can enter all the configuration for the registration with your 3rd party PBX.
Since you have an enterprise phone, which is meant to used with CUCM, you will need to manually format and provide the phone with the configuration files that it would expect from CUCM, there are plenty of threads at CSC and google you can use as reference.
I'd suggest you swap that phone you got, for the 3PCC variant.
