install device packs for cisco call manager cucm 8.5.1

This weekend I am being tasked with installing a device pack for cisco call manager 8.5.1 (cucm 8.5.1).   My question is will stage an upgrade the firmware on all of my phones within the device pack until I change the device defaults?  Or is there a way I can direct the installation to not upgrade the firmware on my phones?  I only need this to get my call manager to recognize a cisco ucs 8831 phone

No way to avoid the DevPack updating the FW under device defaults, you'll need to notice what FW versions you're running, install the DevPack, and before rebooting the whole cluster, change them back to what you had.
