Assuming the platform details (eg hostname, IP address/mask/gateway, DNS, NTP, etc) aren’t changing it should be as easy as shutting the VM down and then export/Import it across hosts. Downtime will depend how your environment is configured (eg whether each product and all of it’s dependencies are properly configured in a clustered/redundant fashion).

You want to start by saying exactly what products you want to move, and not just VMs.
Also, if you have clusters, or not.

Jamie, how are you/. I have same issue I need to move a CUCM Pub, Unity Primary and CER from be7k to a b200 and wonder if there is a guide or anything that will help.

Options are (review compatibility per product in virtualization wiki):
DRS
vMotion
Migrate via shared storage
cold migration, whether it's vMotion, download the files from GUI to a middle man, or directly moving files between servers (via CLI with SCP)
copy/clone VM, and then move with any of above options
We only have documentation for DRS, all other options are VMWare options/features and you'd need to refer to their documentation.
EDIT: product specific:
CUCM, a PCD migration to the same release ONLY if you're using 10.x release. For other releases you forcefully need a higher SU/ES.
CUC, use COBRAS
