Currently I run DNS and DHCP on my Windows based 4.1.2. Call manger server. Can I run the same services on my new Rel. 5.1.1 servers?

By DNS, if you are referring to using CallManager 5.1 as a DNS Client, yes you can do it and it is supported. But once DNS is installed on the box, you cannot remove it and at the same time, you cannot change the DNS information on the CallManager as mentioned in the install doc for CallManager 5.1. Check DNS Enaled setting under Table 7:
Regarding using CM as DHCP Server, yes this can be done. You can configure CM as the DHCP Server.

p.S: Though this doc is for CM 5.0(1), the steps to configure DHCP on 5.1.1 would be the same.

To re-phrase my question. Can I use the CM 5.1 server as my DNS and DHCP server to support my voice network?

Just like Mahesh said, DHCP can be used on CM to support phones, but DNS will have to be external.
