Are you using username@domain.com and are the SRV records in the domain.com that is being used to log into Jabber?

You could be hitting BugId CSCup30905
If you're using Jabber with auto discovery for purely IM&P (i.e. no softphone) then auto discovery doesn't work. The fixes are either upgrade to CUCM 10.something or upgrade to a Jabber client that does not currently exist.

I'd start by using nslookup to make sure you're actually resolving them and that they're properly configured.
