Port-channel as physical interface you can have as much as you can of subinterface' and it limit by SW vlan tag if SW vlan support up to 1023 then you can config up to 1023 (except some reserved vlan).
Note:- Some sw support up to 4093 vlan.

As far as I know, port-channel interfaces don't have different limitations vs. other interfaces that support subinterfaces.
As to your OP "why", for the same reasons you would use subinterfaces, although I think it much more likely a L3 switch port-channel would be a trunk using SVIs and unsure a L3 switch would even support subinterfaces.
