Hello
We're migrating off our legacy 3750 core and need to get an idea of current throughput so we can size our new devices correctly. What's a simple way to see overall throughput without having to set up external monitoring?

you can use couple of commands to verify :
#show ip traffic
#show platform tcam utilization
#show sdm prefer routing
But if you looking interface throughput that need to be monitor make a average caluculation.
Cat 3750 any way end of Life, you need to migrate to new environment.
Best if Cat 9300 Looking more option with Long Support
Note : Datasheet give you more information, is this what you looking ?

on the fixed configuration switches like the 3750, there used to be the command:
show controllers utilization
