Most likely that will not work due to the changes that Exchange has suffered over the years, that's the reason you have multiple options for the different Exchange versions you can use for UM, if you want support for Exchange 2016, you'd need to upgrade to a release that supports it.

But CUCM 7 is compatible with Exchange 2013 which has a very similar workflow to Exchange 2016. So i'm hoping there's a way for this to work.

Is there any article about Exchange 2016 with the supported CUCM versions ?

We are able to call the Exchange Subscriber and dial the voicemail extension but when a call is missed it fails to match the call with the user's voice-mailbox

Sorry, I was thinking about CUC and UM, just saw this is CUCM and Exchange, you'd need to ask Microsoft, we (Cisco) do not test CUCM with Exchange, as they're the ones positioning the product as a UM platform, they're the ones that have to perform the testing and publish the information.

as experts mentioned there is no doc from Cisco about the Exchange with UCM but you can see the Cisco unity compatibility with Exchange servers.

there are tech notes available from Microsoft for PBX integration,  as per below doc, they have tested up to UCM version 8 and the tech notes are applicable in 2016 also. you may find below url useful.

people are successfully using UCM with Exchange 2016 for messaging back end. you can refer the below thread discussion on similar case.
