What is the best way to see what I am sending out for caller ID on a 6608 blade configured as T1 PRI?

Cisco's book "Troubleshooting Cisco IP Telephony" on page 101 describes using a utility called Dick Tracy. You might want to give that a try.

You can also use the Q931 translator available in the Callmanager Serviceability menu.
Make sure that all Gateway traces are enabled in CCM.
