We have done all of our Digital Signage deployments as vertical. It isn't hard; just make sure to set the rotation parameter on the DMP to 90 or 270, depending on which way the TV is turned. Then, build all of your content in 1080x1920 format.
They actually look pretty sharp in vertical...take a look at a pic of one of our deployments (attached).
