I want to acquire information about bandwidth utilization and error rates over a period of time. Can someone give me an idea as to how I can do this?

You can use Cisco View or RTM for this purpose. See the User Guide for more details.

I have been using Cisco View, but it only gives me real-time information. I may not understand how to properly use it... I will continue to try and figure it out using the USer Guide as a resource.

You are right, CV only gives you real time data. Look into RTM as sugested for historical data.
