From experience, which is a more stable operating system to install in a pair of redundant 6509 with super 720?
The switches are used in a network core connected building floors via gigabit etherchannels.
I have WAN routers(7304) performing my routing in/out of the site.

I would go with Native IOS. 12.2(18)SXD should be the way to go. Check the release notes for known issues and to make sure it has support for all line cards/features you need

It depends on what features you are wanting to use in the 6500's. If it is going to be a layer 2 switch only then Cat OS is not bad, but if it will be used as a layer 3 switch then Cisco IOS would be an easier management interface. One command line for the entier switch versus two different command lines for the entire switch.
Also not all cards for the 6500's are supported in Cat OS like the new Wireless card. The Cisco IOS option would be a better option in my opinion.
