Am I using a fa port or a gi port to enable the mini-rmon not sure

Sure.
If you use NAM with 3-1-1a version, you should manually enable mini-rmon each of interface on cat6500. But there are some burg about this.
sometimes, the port stats in the NAM doesn't displyed any information about port statistics.
But, If you use NAM with3-3-1 version, you can enable mini-rmon function by using just one click in the NAM.
"setting"->"swithch parameter"->"mini-rmon"->"enable"->"save"

I'm not running 3.3.1 so if I want to set the mini-rom to 1 port I have to config it to that?

yes.
But, I strongly recommend ugrading 3-3-1 vesion with patch.
Because there are so many burgs existence on the NAM.
Anyway, If you can't upgrade software, you should configure manually each of interface which you want to monitor.

If the switch is running IOS, then to enable mini-rmon on the individual interfaces, you need to use the CLI command [rmon collection stats
