the datasheet for the 1841 cisco router is saying that voice is not supported, only data is supported but the VWIC cards are available for thr 1841 router!!.
I need to run both voice, data and video on the 1841 using the VWIC2-1MFT-T1/E1. is that ok?

By voice they mean you can not run voice services like CCME. You can have voice traffic crossing the VWIC2-1MFT-T1 because it's just data. The router can not terminate a PRI, provide call signaling, etc.

What Collin said ... you can do digital voice on the 1841, but you can not have analog cards / terminations.
