Good Afternoon.
currently I have the 1861 Router with Voice Bundle/SRST. Can I replace the 1861 Routers with a 1941W router and still have Voice Bundle/SRST?

The 1941 (or 1941W) does not have voice support. You need to up go to a 2900 series router, such as a 2901.
I would probably started by looking at a voice bundle like CISCO2901-V/K9 (or if you need a firewall/vpn, etc CISCO2901-VSEC/K9). This is the cheapest way of buying them.

Then buy a separate access points - the standalone units are much better. Examples are the Cisco 1830 or 1850:

If you wanted to go to the latest platform you could also consider a 4000 series router, like the 4321:
The voice bundle you would probably be most interested in would be ISR4321-V/K9. Note that these routers run the newer IOS-XE.
So the 1941 above will do everything the 1861 does, and the config will be close to a "cut and paste" job. Because the 4321 runs IOS-XE (instead of IOS) quite a few things work differently, or are plain missing. Don't ask me which - I usually find out the hard way.
